Sautéed Abalone (quick cook method)

Abalone Recipe

Ingredients

  • Enough flour to coat the abalone
  • 2 lemons sliced into wedges
  • 2 Tbls butter
  • 12 60- 70mm sized abalone
  • 12 shells; cleaned

Instructions

Take prepared abalone meat and coat with flour. On medium high heat place 2 Tbls of butter on skillet. Wait until butter starts to bubble and then quickly place your abalone meat on the skillet. Cook 20 to 30 seconds on each side and squeeze lemon juice over abalone towards the last 20 seconds of cooking abalone. They are done when a fork goes into meat easily. Place the cooked meat back into shells and garnish with more lemon wedges. Serve immediately

With the quick cook method you can use many different sauces. My favourites are:

Tequila lemon sauce

  • 2 tbls tequila
  • 1 garlic clove; minced fine
  • 1 spring onion; julienned fine
  • Juice of 1 lemon
  • Flour
  • Butter

Combine the first 4 ingredients in a bowl. Marinade the prepared abalone for 10 minutes. Take abalone and cover in flour. On a medium high heat pan add a knob of butter till it bubbles and add the abalone. Use the fast cook method to cook the abalone and place on a plate. Return the marinade to the pan and reduce to a thickened sauce. Pour over the abalone and serve immediately.

Soy sauce with sesame oil, garlic, lemon and spring onion sauce

  • 4 tbls soy sauce
  • 1 tbls sesame oil
  • 1 garlic; minced fine
  • 1 spring onion; julienned fine
  • Juice of 1 lemon
  • Flour
  • Butter

Combine the first 5 ingredients in a bowl. Marinade the prepared abalone for 10 minutes. Take the abalone and coat with flour. On a medium high heat pan add a knob of butter till it bubbles and add the abalone. Use the fast cook method to cook the abalone and place on a plate. Return the marinade to the pan and reduce to a thickened sauce. Pour over the abalone and serve immediately.
